Stuffed chicken with stuffing is one of my childhood favorites. My mom made it often and I would jump for joy. I remember watching her make it when I was young, and was amazed at how easy it was. She does it differently then me and I’ve jazzed mine up several ways. She uses boring and gross jar or canned gravy, sorry if you use this, and instead of stuffing the chicken now she makes it like a casserole. It’s still good but I like to roll my chicken up and stuff it with stuffing. You can make my recipe easier by using jar, packaged or can chicken gravy although I’m not a big fan, but I make homemade gravy at the end close to when it’s finished. Use Stove Top Chicken Stuffing and serve with creamy mashed potatoes and dinner is done.
Preheat oven to 400. Trim fat and wash chicken. Pound chicken to 1/2 inch thickness between wax paper. Prepare 2 servings of Stove Top Chicken according to package directions. In a small bowl combine sea-salt, Mrs. Dash Lemon Pepper, garlic powder, and black pepper. Sprinkle both sides of chicken breasts with mixture and rub it in. Add semi melted butter to the center of each chicken breast and spread.
Add 1/3 cup-1/4 cup stuffing to the center of each chicken breast and roll up. Place a toothpick or small skewer in to secure stuffing from falling out. In a glass baking dish add 2 cups lower sodium chicken broth and sprinkle with fresh black pepper.
Bake 30 minutes. Remove from oven and and pour broth into a small pot to prepare gravy. Put chicken back in the oven for 5 minutes. Prepare gravy by mixing cornstarch and water in a cup, add to pan of broth until thick. Mix well. Take the chicken back out, pour gravy over and bake an additional 10-15 minutes.
