With being a daycare provider I am always looking for delicious yet healthy snacks for the kids. Fruit seems to be a favorite for everyone in my care, and with it being summer strawberries and blueberries are always stocked in my fridge. I have made this strawberry blueberry snack for a while now, and the kids gobble them right down. With yesterday being the 4th of July, I knew this would be a perfect treat that fit our 4th of July festivities. Strawberries are red, blueberries are blue, and the plain Greek yogurt is white. Prep time is quick which means this snack is ready in minutes and leftovers refrigerate easily, however there won’t be any leftovers. This is low fat and low calorie! Enjoy this snack.
Choose 12 juicy and plump strawberries, hull and wash. Rinse 24 blueberries. Cut each strawberry lengthwise and use a melon baller or small spoon to scoop out the centers. You may need to wash again. Arrange on a platter. My deviled egg plate works wonderful. Once arranged, place the yogurt in a zip top bag, and snip the end. Squeeze yogurt into the centers of strawberries and place a blueberry in the center. Arrange more blueberries in the center of platter if you wish. Enjoy.
