Protein Packed Blueberry Oatmeal

protein packed blueberry oatmeal recipeMany people I know skip breakfast saying they don’t have time to eat.  This is how I used to be years ago, until I understood that breakfast was the most vital meal of the day.  I try to eat filling meals including protein packed smoothies, egg white omelets with loads of veggies or a filling bowl of cereal with fruit.  Oatmeal is a meal I have always enjoyed as it is extremely filling and satisfying due to the soluble fiber, low in fat,  it’s nutritious and offers many health benefits including lowering cholesterol.  I am not talking about flavored instant packets which are filled with sugar; not good.

This blueberry oatmeal recipe is one I eat often.  It takes less than 5 minutes to prepare and you can eat it while getting ready in the morning.  I highly recommend high quality oats such as Tropical Traditions Organic Whole Grain Rolled Oats , but any thick rolled oats will do.   Enjoy this filling, low fat, protein packed oatmeal to start your day off right!

Protein Packed blueberry oatmeal recipe with blueberries, thick rolled oats, flax and vanilla protein powder
Ingredients
  • 1/2 cup organic thick rolled oats
  • 1 cup water
  • dash ground cinnamon
  • 1 teaspoon ground flaxseed
  • 1 scoop vanilla protein powder
  • 1/4 cup unsweetened almond milk or fat-free mikl
  • 1/2 cup fresh or frozen(thawed) blueberries-if using frozen use unsweetened
  • sugar free maple syrup or Truvia packet-optional
Instructions
  1. Place oats and water in a large microwave safe dish and microwave on high 3 1/2-4 minutes.
  2. Add cinnamon and flax, mix well
  3. In a cup add protein powder and almond milk. Stir well until smooth
  4. Pour mixture into oatmeal and mix until smooth.
  5. Fold in blueberries.
  6. Top with sugar-free syrup or sugar substitute if using.
