Healthier Shepherd’s Pie

I am a huge fan of shepherd’s pie.  There is something about the meat and vegetable filling covered with cheesy mashed potatoes.  I know there are so many variations of the dish, but mine seems to be loved by everyone who visits.  While we are very basic and use peas and carrots, you can really add whichever vegetables your family prefers; whether that is beans, corn or something else.

Lower calorie and lower fat shepherd’s pie with ground sirloin, vegetables topped with healthy mashed potatoes
Ingredients
  • 2 lb russet or Yukon Gold potatoes-peeled and cubed
  • 4 cloves garlic
  • 2 tablespoon fat free sour cream
  • 1/2 cup 2% shredded cheddar cheese
  • Pepper to taste
  • 1 1/4 pound extra lean ground sirloin
  • 2 tablespoon all-purpose flour
  • 1/2 cup sweet onion-chopped
  • 15 ounce can peas and carrots-no salt added-drained and rinsed
  • 3/4 cup fat free reduced sodium beef broth
  • 2 tablespoon Simply Heinz Ketchup
  • 1 tablespoon Worcestershire Sauce-reduced sodium
Instructions
  1. Preheat oven to 375°
  2. Place potatoes, and garlic in a pot of water. Bring to a boil. Reduce heat and cook potatoes until fork tender-about 15 minutes
  3. Drain and discard garlic
  4. Whip potatoes with sour cream with a hand mixer
  5. Stir in cheese and add pepper to taste
  6. Brown sirloin in large saute pan over medium heat.
  7. Stir in flour and cook 1 minute-stirring constant
  8. Add in onion, canned vegetable, broth, ketchup and worcestershire. Cook 5 minutes stirring frequently
  9. Lightly grease a 8×11 baking dish with cooking spray
  10. Spoon meat mixture into dish
  11. Top with potatoes and even out.
  12. Bake 20 minutes, remove from oven and let sit 5 minutes.

    I love Shepherd’s Pie too….my boys not so much though. The crazy kids don’t like mashed potatoes:) When I make it I do a really thin layer of potatoes and only give them a little bit with mostly the meat/veggie mixture. They don’t complain too much! I love that you made this for under 300 calories. I’ll have to try your variation soon!
