Well, hello there fall, I’m so glad you have arrived! Although, I enjoy summer the heat absolutely kills me. I lived in Florida for 6 years and yearned for the day to arrive back here in my hometown here in New York State. Florida really isn’t fun for me anyways. How can anyone get into the spirit of holidays when seasons do not change?
Fall to me means apples, pumpkin and pumpkin seeds, pears, squash, leaves changing and of course Halloween! I look forward to the days to bake and cook with all those delicious foods again because summertime my oven is barely turned on. Which is why I’m thrilled to share my apple cinnamon pancakes. Although, not a baker I can still whip up delicious breakfast foods for my family. These apple cinnamon pancakes have wholesome ingredients, are flavorful thick and low in fat (only 1 gram of fat for 2 pancakes!). Not a fan of thick pancakes? Just add a bit more milk until you have the consistency you prefer.
- Dry Ingredients:
- 1 cup all-purpose flour
- ½ cup 100% whole wheat flour
- 1 teaspoon ground cinnamon
- 1 teaspoon baking powder
- ½ teaspoon baking soda
- 1 tablespoon Truvia
- ¼ teaspoon salt
- Wet Ingredients:
- 6 ounce cup Chobani Apple Cinnamon Greek Yogurt
- ½ cup natural applesauce-unsweetened
- 3 tablespoon milk (more if you want them a bit thinner)
- 1 egg
- 1 apple-peeled and chopped
- cooking spray
- Fresh Fruit, syrup for topping
- Heat griddle to 375°F.
- In a large bowl add dry ingredients-whisk to mix
- In another bowl add wet ingredients (not apple chunks) and mix with hand mixer until thoroughly mixed.
- Add wet ingredients to dry.
- Mix until blended
- Fold in apple chunks
- Spray griddle with cooking spray
- Add about ¼ cup pancake batter to griddle. Continue until batter is gone
- Cook pancakes until tiny bubbles/holes form on the topside of pancakes
- Flip
- Cook until golden brown
- Top with syrup or fresh fruit








yum! i try to make pancakes for the kids at least one day a week and I’m always scrambling for an alternative flavor besides chocolate chips
