Summertime is one of my favorite seasons, but not for reasons you may think. I despise the extreme heat, but love fresh grown fruits & vegetables. Our local farmers markets are booming this time of year, therefore I always make sure to hit them up to support our local farmer’s. Plus farmers market produce and condiments are fresh, many organic and taste amazing. Sure, more expensive but I’ll take costly local grown foods over store bought any day.
Mexican night is a favorite in our household. From tacos, to Mexican rice and corn, fajitas and tostados with beans. My husband and kids ask for taco or fajitas at least once a week. The other week I hit up our local farmers market to pick up fresh green bell peppers, sweet onions, lettuce and tomatoes so I could prepare chicken fajitas.
Preparing chicken fajitas with Old El Paso fajita kit is easy.
Just cook up chicken in olive oil until no longer pink, add in a sliced onion and green peppers with fajita seasoning mix, cut up your toppings, warm tortillas and you’re good to go.
