I never knew how much I’d become addicted to fruit until I started eating it. I’ve always enjoyed eating fruit but it was a here and there thing. Now it is an every meal and snack thing!

One of my current addictions are mandarins. Wonderful Halos mandarins. I even expressed my addiction to them back in January.

Though, Halos mandarins are amazing on their own, I enjoy them in a mandarin spinach salad often with my lunches.

I make up a large bowl to enjoy through the week. It is absolutely delicious with a bit of sweetness from the oranges, crunch from the walnuts and vegetables. Make for a large crowd next time you serve dinner, as everyone is sure to enjoy.

Easy mandarin spinach salad with walnuts

Serves: 4
Ingredients
  • 2 cups baby spinach
  • 2 cups romaine lettuce-chopped
  • 5 Halos mandarins-peeled and sectioned
  • ½ medium red onion-thinly sliced
  • ½ seedless cucumber-thinly sliced
  • 2 tablespoon walnuts-chopped
Instructions
  1. Place all ingredients in a bowl, toss.
  2. Serve with your favorite poppyseed dressing

  5. Oh we love to just peel them and eat them, but I do have a chicken salad I make that has cooked noodles, mayo, grapes, and mandarin oranges in it that I really love!
