December 9 was my husbands 32nd birthday and he is a huge fan of Reese’s Peanut Butter Cups. I found this recipe over at Got Chocolate and decided I had to make these, as a surprise for my wonderful husband. He absolutely loved these and demolished them, all by himself, minus a few the kids ate. Wanna learn something about me? I hate Reese’s. I know horrible right? I’m not a fan of peanut butter inside of cookies, pies, candy, or anything like that. This is a great cookie recipe if you need to finish up some Christmas cookies. So here is the recipe which I did almost the same except added in the chocolate chips.
Double Chocolate Reese’s Peanut Butter Cup Cookie Recipe:
2 1/2 Cups flour
1/2 tsp. baking soda
1/4 tsp. salt
1/2 Cup unsweetened cocoa powder
1 Cup dark brown sugar, packed
3/4 Cup white sugar
1 Cup salted butter, softened(I used unsalted)
3 large eggs
2 tsp. pure vanilla
3/4 Cup semi-sweet chocolate chips
Miniature Reese’s Peanut Butter Cups
Preheat oven to 300* F.
In a medium bowl combine flour, soda, salt and cocoa powder. Mix well with a wire whisk and set aside.
In a large bowl blend sugars with an electric mixer at medium speed.
Add butter and beat to form a grainy paste.
Scrape down sides of bowl, then add eggs and vanilla. Beat at medium speed until light and fluffy.
Add the flour mixture and blend at low speed just until combined. Do not overmix.
Add the chocolate chips
Drop dough by rounded tablespoons onto ungreased cookie sheets (I used parchment paper)1 1/2 inches apart and push in a Reese’s peanut butter cup into the center.
Bake for 21-23 minutes. Immediately transfer cookies with a spatula to a cool surface and Enjoy!
