Stuffed Chicken Breasts Baked With Stuffing

Stuffed chicken breast with stuffingStuffed chicken breasts with stuffing is one of my childhood favorites.  My mom made stuffed chicken breasts often and I would jump for joy.  I remember watching her make it when I was young, and was amazed at how easy it was.  She does it differently then me and I’ve jazzed mine up several ways.  She uses boring and gross jar or canned gravy, sorry if you use this, and instead of stuffing the chicken breasts now she makes it like a casserole.  It’s still good but I like to roll my stuffed chicken breasts up and stuff it with stuffing.  You can make my recipe easier by using jar, packaged or can chicken gravy although I’m not a big fan, but I make homemade gravy at the end close to when it’s finished. Use Stove Top Chicken Stuffing and serve with creamy mashed potatoes and dinner is done.

Did a Google search on stuffed chicken breasts with stuffing mix. My Dad had a few problems and just recently got out of the hospital, with a rather strict diet in tow. This means I can’t use my normal method for stuffing chicken breasts (which includes about four things he can no longer eat.) The man can’t cook for himself (he can burn water, I’ve seen it happen) and since we’re neighbors, I usually make dinner and bring it over to him. I found this page and I think I might just make this all the time! It was absolutely delicious! I love the lemon pepper in it, definitely jazzes it up! My very picky sister also enjoyed it, immediately asking for the recipe.

Thank you so much for sharing this! Your method for homemade gravy is genius, too. ;)
