Ah yes, we are in full Back to School mode at our house! The kids schedules are filling the calendar which means I am running my oldest at various times throughout the week to band practice, running kids to the bus stop, checking homework, and let’s not forget all of the parent meetings that happen the first few weeks of school! In addition to that chaos just normal everyday life is happening at lightening speed!
My goal is to always make sure I have something hot and nutritious on the dinner table each evening, however, sometimes that is really hard to do! I do meal plan each week and buy groceries accordingly, but there are just some days that what I planned isn’t going to work; no matter how hard I try! We’ve all been there. It’s that moment you are running to the store because someone forgot they have a project due to the next day and they need some very specific supplies…..or you are reminded about that parent meeting that you forgot to write on the calendar…..yeah there goes the planned meal.
That is that moment you rush to the fridge looking to find leftovers and realize there aren’t any! Then you make another mad dash to the pantry trying to find ingredients to throw something together. Realization then sets in you are going to have to do take out or have something delivered, which don’t get me wrong, works great, however, sometimes you are looking for something a little different.
Something that is both healthy and nutritious AND something that the kids will also love! Yeah, I know that face you just made! LOL! I’ve made it myself more than once. Trying to find meals that fit that criteria is hard! It’s even hard for me at times! I’m the type of person that used to eat cereal for dinner before we had kids if my husband wasn’t going to be home for dinner……don’t tell my kids that!
Trying to find quick and easy 30 minute meals that my whole family likes, I changed up a couple of meals on my family over the past couple of weeks. One night we had Fiesta Taco Bowls
and another night we had Sesame Garlic Chicken Bowls
shockingly they loved the meals! My husband even asked if we had more! For me, if the kids AND my husband like it, that is a win-win!
These meals were so easy! Three simple steps (cook, sauté, spoon) and within 30 minutes, you have a hot, healthy meal for four! Meals that have over 40g of whole grains, artificial colors or flavors!
