Gooey Turtle Cake….this is one of those cakes that measure up to it’s name! It’s gooey, oooey, yummy and delish! As I was going through some old recipe books today I found this recipe. One would think I know better then going through a cookbook when I’m hungry. That unfortunately only leads to one thing. That one thing is I end up either cooking or baking something! LOL! My husband doesn’t think that’s a bad thing nor do my kids. My waist line though pays for it. But that’s ok too. Well not really but for the sake of the argument, it’s ok. Because sometimes we all need some warm and yummy soul food. It’s good not only for our heart and mind but our soul.
The original recipe called for evaporated milk and a bag of caramels, cocoa powder plus powdered sugar dusted on top. I am all about sweets but I have to say, that was a bit much, even for me. So I ended up tweaking the recipe to make it fit my family more.

Without further ado, here is our version of Gooey Turtle Cake!
1 box cake mix – you can use chocolate or yellow. Since I had yellow in the pantry, that’s what we used.
Ingredients according to the cake mix box
2 cups chocolate chips
1 cup pecans (chopped)
1 container of caramel syrup
Cooking spray and flour to prep the baking pan
Mixer for the cake mix
*Pro Tip: If you haven’t already, invest in a Kitchen Aid Commercial Mixer. I have had mine for almost 10 yrs and it is truly amazing! I received it as an anniversary gift from my husband. It’s versatile that you will ask yourself why we never bought one before.
Wooden spoon or other round object to poke holes in cake
Heat oven to required temp according to the cake mix. Prepare the cake mix as instructed. Pour the cake batter into the baking pan and follow the cooking time on the cake mix. Once the cake is baked, take it out of the oven and allow it to cool for about 5 minutes.
Then take a wooded spoon or other object to poke holes all over the cake then pour 1/2 cup of the caramel syrup all over the top of the cake.
Then generously sprinkle the chocolate chips and the pecans all over the top of the cake.
While the cake is still warm, serve a slice of the cake and drizzle some caramel syrup over the top of the cake. This cake is so delish! The caramel syrup further moistens the cake and the chocolate and pecans had the perfect blend of sweet and crunch.
