Cinnamon and Sugar! That is a combo that can quickly turn your yucky day into a fantastically sugar coated day!
There is something about Fall that makes it a priority to make comfort foods. Maybe it’s because our body knowns soon it will be cold and we need to sustain our body fat (my body seems to be in that mode 365/224/7).
I wanted to come up with a quick and tasty snack for the kids when they got home from school (I know it’s not healthy but is’ ok to indulge occasionally) so I came up with this recipe. I hope you enjoy!
Cinnamon Sugar Bites
1/2 cup butter, softened
1 c sugar
1/2 c milk
1 t vanilla extract
1 t maple extract (that’s the what is that in this recipe)
1 1/2 cup flour
1 t baking soda
Cinnamon Sugar Coating:
1/2 tsp cinnamon
2 cup sugar
Mini muffin tin
Brown paper bag
1 TBSP cookie scoop
Preheat oven to 375 and lightly spray a mini muffin pan.
In a larger mixer, cream the butter and sugar together slowly to incorporate the eggs and remaining wet ingredients. Once they are mixed together add in the dry ingredients (flour/baking soda).
Pro-tip: make sure the mixer is set tot the lowest speed or you’ll have a mess (or so I’ve heard)
Fill each muffin tin with 1 tblsspoon of the mixture. Place in the oven and bake for 10 minutes then in five minute intervals until tthey pass the toothpick test.
While they are baking, open the brown paper bag and put in the sugar and cinnamon.
After removing them from the oven, while they are still warm, add 4 or 5 into the brown paper bag with the coating mixture at a time and then remove them onto a serving plate .
