Kisses that are light, airy, minty, and crunch pretty much sums up these cookies! Oh and did I say addictive?!?
I found this recipe in a cookbook recently and thought I would create my own version of these cookies. They definitely came out very light and crispy.
I hope you enjoy this Peppermint Kisses cookie recipe!
1/2 cup mini chocolate chips
2 regular sized candy canes, crushed
1 tsp vanilla
3/4 cup sugar
1/8 tsp salt
2 egg whites
Silicone baking mats
Preheat oven to 250 degrees. Line your cookie sheet with wax paper, parchment paper or a silicone baking mat.
Put the two candy canes into a storage bag and use a meat tenderizer, food grinder, or rolling pin and crush the peppermint candies until they are crushed.
In a mixer, add the egg whites and salt and beat until the mixture is stiff but not dry. Gradually add sugar and mix together until you reach a stiff consistency.
Fold in mini-chips, peppermints, vanilla.
Drop by teasponsoonfuls onto greased cookie sheets. Leave about one inches between the cookies and then bake for 45 minutes
When the cookies are done, take them out of the oven and let them sit for a little bit. Place them on a baking rack to cool.
